Yes, and it is the strongest aging force on a Utah roof. An asphalt shingle is asphalt held together with oils. Ultraviolet light drives those oils out. The shingle grows stiff and brittle as it loses them. Utah gives that process an unusual number of hours to work in.
Utah is one of the driest states in the country, averaging about 13.4 inches of precipitation a year according to NOAA. Dryness itself does not hurt the roof. What comes with it does: dry air means cloudless days. Cloudless days mean the sun works on your shingles from morning to evening with nothing in the way.
The granules on top of the shingle are the shield. The Asphalt Roofing Manufacturers Association describes them as the layer protecting the asphalt from ultraviolet light, moisture, and ozone. While the granules stay put, they take the hit. Once they wash off, the asphalt underneath is exposed and the clock speeds up.

Elevation changes plenty about a roof, just not how fast the sun wears it out. The assumption is reasonable: thinner air does mean more ultraviolet reaching the ground. So higher sounds like it should be harder. But temperature does more work than ultraviolet in aging asphalt, and the mountains are cooler.

It is common to see one slope noticeably more weathered than another on a roof of a single age. That is normal, and it is a good reason to have someone look at all sides rather than one.
The effect is smaller than people hope. A lighter surface reflects more heat, which helps a little. But attic ventilation moves far more heat out of a roof assembly than shingle color reflects away from it. Choose the color you want on your house. Spend the attention on getting the ventilation right, because that is where the real temperature difference is won.
Southern Utah is hotter and takes more intense sun for more of the year. So yes, heat and ultraviolet exposure work harder on a roof down there than they do up here. Snow cover does block ultraviolet light while it is there. But it brings its own problems that far outweigh the benefit. Standing snow and the meltwater underneath it drive ice damming. For aging asphalt shingles there are rejuvenation treatments that restore some pliability to shingles that have dried out over time. That's a different question from blocking ultraviolet light. Coatings marketed as sun protection for residential shingles are generally not worth the money. Some of them will void the manufacturer's warranty outright. Check what your shingle manufacturer permits before anyone sprays anything up there.
